Summer Recipes: Pasta Salad

Since summer is right around the corner, I wanted to share go to pasta salad recipe. I have made this soo many times. Whether it’s for dinner, potluck or picnics it will be a hit. I love this pasta salad all year around, but mostly in the summer as a quick lunch or a side dish for dinner.

 

You will only need a handful of ingredient.

This is basically a chop and dump type of recipe. The longer it sits in the fridge the yummier it gets. My secret ingredient to get the flavors to POP is (drumroll please)

Celery seeds! It adds just the kick that this salad needs to keep people coming back.

Shay’s Famous Pasta Salad

2 cups of garden rotini (cooked as directed & drained)

1 pgk of imitation crab logs (cubed)

1 can of baby shrimp

1 seedless cucumber (chopped)

Cup & ½ of cherry tomatoes (cut in half)

1 bottle of Kraft Zesty Italian dressing

Celery seeds (sparingly)

 

Mix all the ingredients together except the last two. Pour a generous amount of the dressing over the salad and mix. Let it sit for about 5min so the pasta can absorb the dressing and mix again and add more dressing. You don’t want it swimming in dressing but you defiantly don’t want it dry. I normally pour celery seed in the top (as pictured) and sprinkle over the top of salad to cover it. Then I mix it and sprinkle more seeds over the top. Then refrigerate. The longer it sits the better.
